The chief operating officer of Luby's Inc., a national restaurant chain based in Houston, has resigned from that role to become its general counsel, the company announced on Wednesday.

On Monday, Peter Tropoli resigned as COO, according to a filing by the U.S. Securities and Exchange Commission, and took over the role of general counsel, which he will be for the second time in his career. According to the filing, he will be paid an annual salary of $350,000 a year. As company COO, he was making $388,576 a year. Tropoli will continue to serve out his term as a board member.

Tropoli previously was Luby's general counsel from 2001 to 2011, before becoming the COO in 2012. According to The Texas Bar, Tropoli graduated from the University of Houston Law Center in 1996.

Tropoli will replace Roy Camberg, of the Camberg Law Firm, who was the company's top lawyer since 2014, according to The Houston Business Journal, which first reported on the corporate changes.

“Peter has been a tremendous asset to our company since 2001. His restaurant industry knowledge, extensive company experience and deep understanding of real estate, coupled with his expertise in legal, administrative and regulatory matters will continue to provide significant value to our team,” Luby's CEO Chris Pappas said in the news release.

A spokesperson for Luby's did not respond to a request for comment.

The move was announced on the same day that the company's board named Todd Coutee to be the restaurant's chief operating officer. Coutee served as the company's senior vice president of operations since 2011.

“Todd brings extensive restaurant operations and leadership experience to this role having most recently served as SVP of operations for culinary contract services. In addition, he previously held operational leadership positions at each of our brands, having served as SVP of operations at Luby's Cafeterias, and Fuddruckers,” Papas said in the release.

Luby's is the operator of Luby's Cafeterias and Fuddruckers franchises in the United States. It also operates two Cheeseburger in Paradise restaurants.
