Former Panera Bread GC to Lead Restaurant Company's Legal Team
The former general counsel of Panera Bread Co. was made the top lawyer of the company that owns and franchises the Pollo Tropical and Taco Cabana restaurant brands.

Dallas-based Fiesta Restaurant Group Inc. has announced that the former general counsel of Panera Bread Co. will be taking over the legal department, effective immediately.
Louis DiPietro began his role as the company's senior vice president, general counsel and corporate secretary of the parent company of Pollo Tropical and Taco Cabana on Monday. DiPietro replaces Maria Chang Mayer, who left the company Dec. 14, according to a U.S. Securities and Exchange Commission filing. It is unclear why she left the company. Mayer was appointed the company's general counsel in October 2017, according to a previous news release.
DiPietro was not immediately available for comment Tuesday.
DiPietro has spent the past 12 years working in the legal department at Panera Bread. He was hired as vice president and deputy general counsel in 2006 and in 2014 was named senior vice president and general counsel. He has also been an associate at Hutchins, Wheeler & Dittmar and an associate at Morse, Barnes-Brown & Pendleton. DiPietro also previously was general counsel at Mainspring Communications, which was acquired by IBM in 2001. He graduated from the Boston College School of Law in 1996, according to his LinkedIn profile.

Lou has over a decade of relevant industry experience that I am confident will serve the company well as we set course for future growth and build long-term shareholder value,” Fiesta president and CEO Richard Stockinger said in a statement Monday.
