Lovers of gourmet cheese no longer have to fear that the Food and Drug Administration will kill off a key step in artisanal cheesemaking: the use of wood boards to age cheese.

Governmental regulators issued a clarification Tuesday that “we have not and are not prohibiting or banning the long-standing practice of using wood shelving in artisanal cheese.”
