A number of New York restaurants serve goat, but few of them are so committed to the animal that they actually have a full-size pink one hanging over the door. That is the case with Cabrito, the West Village restaurant where Dave Schuttenberg is the chef. Schuttenberg, a protege of spicy meat whiz Zak Pelaccio, has seen the tiny Mexican kitchen pick up a New York Times star from Frank Bruni in its first year and feels good about its future. We sat down with him to talk about the joys of goat.
