As Hurricane Katrina thundered toward New Orleans, the 145 lawyers and staff at Jones, Walker, Waechter, Poitevent, Carr�re & Den�gre fled the city. But managing partner William Hines chose to stay behind. A New Orleans native, Hines, 49, had weathered storms in the past.
